Dark chocolate and raisins are always one of the best combinations. Thought of using both in a cake and specially Christmas cake. Tempting and Delicious it is
Ingredients
All purpose flour - 1 1/2 cup
Sugar -3/4 Cup
Coco Powder - 1/4 cup
Grated Chocolate 1/2 dairy milk
Lukewarm Milk 1/4 cup
Curd - 1/4 cup
Raisins dipped in apple juice (canned) 24 hours before the preparation
Oil 1/4 cup
Baking powder 1 tbsp
Baking soda 1 tbsp
Nutella for spreading
Sugar Sparkles 1/4 cup
Preparation
Soak the raisins in one cup apple juice 24 days before the cake preparation.
Next day, mix the all purpose flour, sugar, baking powder, baking soda, coco powder in a pan.
Add oil and curd and mix well
Now add lukewarm milk in it and make a runny batter with it
Now strain the raisins and add into the batter
Keep mixing until it forms a perfect runny mixture
In a pressure cooker, make a thick base of salt and let it be heated on low flame for 5 minutes
Grease an aluminum cake mould with oil
Add the batter into the mould
Put into the pressure cooker and place it on the salt layer.
Take out the whistle of the cooker lid
Now place the lid on cooker and close it normally
Let it be baked for 30 minutes first on medium flame
After that. check the cake with tester stick, if it is still sticking to it then bake it for 10 minutes more, If not then off the flame
When it passed tester check, take out with the help of gloves and let it be cool
Demould it after 10 minutes
Spread nutella on the top and sprinkle sugar sparkles on it
Cut it in pieces
You can serve it hot and cold both. If want to serve hot, you can add vanilla ice cream in it.
Do you like Apple cocktails? I just love apple martini cocktail. Think when you are having a cocktail in cake form. Festive season is going on so thought of making this on Christmas. Dried fruits soaked in vodka and apple juice then added to cake stuff and the taste is just of this world.
Ingredients
Vodka (Any type of, I used smirnoff) - 1/2 cup
Apple Juice - 1/2 cup
Dried apricots 5-6
Dried Pineapple 3-4
Dried grapes 5-6
Dried plums 5-6
Raisins 10-12
Almonds 5-6
Tutty fruity 1/4 cup (mix color)
All purpose flour - 1 1/2 cup
Sugar 1/2 cup
Lukewarm Milk 1/4 cup
Oil 1/4 cup
Curd 1/4 cup
Baking Powder - 1 tbsp
Baking soda - 1 tbsp
Preparation
Chop the dried fruits
Soak all the fruits in 1/2 cup apple juice
Add the vodka in it
Let them be soaked for at least 2 hours, i soaked for 4 hours
After 4 hours, strain the soaked fruits and keep the juice and vodka mixture aside
Now in a pan, mix all purpose flour, sugar, baking powder and baking soda very well
Now add curd and oil in it
Add lukewarm milk in it and mix it well
Add 2-3 tbsp of vodka mixture in it.
Keep blending it well till it forms a runny mixture
Add 1 tbsp of all purpose flour into the strained soaked fruits, mix well
This will help the fruits in mixing with the batter and prevent them from sticking to one another
Now add the soaked fruits in it and chopped almonds and raisins too.
Mix it really well.
Pre heat the oven for 5 minutes on 150 degree
Grease the aluminium mould with oil and pour the batter in it
Bake it in oven for 30 minutes at 150 degree temperature.
Check with tester stick comes out clear
Then take it out.
Usually cake will take 30-40 to bake properly.
Sprinkle the chocolate powder on it
Garnish with fresh fruits like grapes, pineapple and kiwi.
What about a cake full of nuts, dry fruits and tutty fruities. Flavor is out of the world and softness is just it melts in the mouth. Finished in 10 minutes of serving. My christmas party becomes perfect with this in menu.

Walnuts - 5-6
Dates 5-6
Tutty Fruity Multicolor - 1/4 cup
Curd 1/4 cup
Coke - 100 ml
Baking soda 1 tbsp
Baking powder 1 tbsp
Oil 2-3 tbsp
Preparation
Soak all the chopped nuts in pineapple juice for 2 hours
Mix all purpose flour, baking soda, baking powder, sugar in a big bowl
Strain the soaked dry fruits and keep aside
Add 1 tbsp of all purpose flour in it and mix well
Now add curd and oil in flour mixture
Slowly add coke in the mixture so that no lumps formed.
Add the floured nuts in the mixture and mix well.
Grease the aluminium mould and pour the batter in it.
Pre heat the oven at 150 deg for 10 minutes
Bake the cake for 40 minutes in oven at 150 degree
It would rise almost 1.5 times to its actual size.
