Dark chocolate and raisins are always one of the best combinations. Thought of using both in a cake and specially Christmas cake. Tempting and Delicious it is
Ingredients
All purpose flour - 1 1/2 cup
Sugar -3/4 Cup
Coco Powder - 1/4 cup
Grated Chocolate 1/2 dairy milk
Lukewarm Milk 1/4 cup
Curd - 1/4 cup
Raisins dipped in apple juice (canned) 24 hours before the preparation
Oil 1/4 cup
Baking powder 1 tbsp
Baking soda 1 tbsp
Nutella for spreading
Sugar Sparkles 1/4 cup
Preparation
Soak the raisins in one cup apple juice 24 days before the cake preparation.
Next day, mix the all purpose flour, sugar, baking powder, baking soda, coco powder in a pan.
Add oil and curd and mix well
Now add lukewarm milk in it and make a runny batter with it
Now strain the raisins and add into the batter
Keep mixing until it forms a perfect runny mixture
In a pressure cooker, make a thick base of salt and let it be heated on low flame for 5 minutes
Grease an aluminum cake mould with oil
Add the batter into the mould
Put into the pressure cooker and place it on the salt layer.
Take out the whistle of the cooker lid
Now place the lid on cooker and close it normally
Let it be baked for 30 minutes first on medium flame
After that. check the cake with tester stick, if it is still sticking to it then bake it for 10 minutes more, If not then off the flame
When it passed tester check, take out with the help of gloves and let it be cool
Demould it after 10 minutes
Spread nutella on the top and sprinkle sugar sparkles on it
Cut it in pieces
You can serve it hot and cold both. If want to serve hot, you can add vanilla ice cream in it.
