Apple Martini Fruit Shot Cake


Do you like Apple cocktails? I just love apple martini cocktail. Think when you are having a cocktail in cake form. Festive season is going on so thought of making this on Christmas. Dried fruits soaked in vodka and apple juice then added to cake stuff and the taste is just of this world.


Ingredients

  • Vodka (Any type of, I used smirnoff) - 1/2 cup
  • Apple Juice - 1/2 cup
  • Dried apricots 5-6
  • Dried Pineapple 3-4
  • Dried grapes 5-6
  • Dried plums 5-6
  • Raisins 10-12
  • Almonds 5-6
  • Tutty fruity 1/4 cup (mix color)
  • All purpose flour - 1 1/2 cup
  • Sugar 1/2 cup
  • Lukewarm Milk 1/4 cup
  • Oil 1/4 cup
  • Curd 1/4 cup
  • Baking Powder - 1 tbsp
  • Baking soda - 1 tbsp

  • Preparation

    1. Chop the dried fruits
    2. Soak all the fruits in 1/2 cup apple juice
    3. Add the vodka in it
    4. Let them be soaked for at least 2 hours, i soaked for 4 hours
    5. After 4 hours, strain the soaked fruits and keep the juice and vodka mixture aside
    6. Now in a pan, mix all purpose flour, sugar, baking powder and baking soda very well
    7. Now add curd and oil in it
    8. Add lukewarm milk in it and mix it well
    9. Add 2-3 tbsp of vodka mixture in it.
    10. Keep blending it well till it forms a runny mixture
    11. Add 1 tbsp of all purpose flour into the strained soaked fruits, mix well
    12. This will help the fruits in mixing with the batter and prevent them from sticking to one another
    13. Now add the soaked fruits in it and chopped almonds and raisins too.
    14. Mix it really well.
    15. Pre heat the oven for 5 minutes on 150 degree
    16. Grease the aluminium mould with oil and pour the batter in it
    17. Bake it in oven for 30 minutes at 150 degree temperature.
    18. Check with tester stick comes out clear
    19. Then take it out.
    20. Usually cake will take 30-40 to bake properly.
    21. Sprinkle the chocolate powder on it
    22. Garnish with fresh fruits like grapes, pineapple and kiwi.
    23. Your apple martini cake for celebration is ready
    24. Slice and Serve
