Pineapple Halwa

Taste of halwa and twist of pineapple. Delicious and melts in mouth. I am just loving it. 


Ingredients

  • 2 cups - Semolina
  • 1 cup - Pineapple Chunks
  • 1 cup - Sugar
  • dry fruits
  • 1/2 cup - Desi ghee
  • 1 tsp - Yellow Food Color
  • 6 cups- Water
  • Preparation

    1. Take a pan and add semolina over medium heat. Saute for 2-3 mins.
    2. Add desi ghee and saute till it gets roasted and becomes golden in color.
    3. Add sugar and pineapple in and mix well.
    4. Add water and yellow food color it.
    5. Let it cook until the water is evaporate and add dry fruits, stir for 1 minute.
    6. Remove from heat and let it cool for 2-3 mins.
    7. Garnish with pineapple chunks and fruits. Serve and enjoy!

NARGISI KOFTA

Delightful taste with touch of paneer makes it more soft


Ingredients

  • bottle gourd - 1
  • paneer grated - 250 gms
  • besan - 1 bowl
  • onions- 2
  • tomatoes- 2
  • garlic and ginger
  • green chillies -2
  • fresh cream or Malai - 1/4 cup
  • turmeric powder - 1 tbsp
  • chilli powder - 1/2 tbsp
  • coriander powder - 1/2 tbsp
  • garam masala - 1/2 tbsp
  • raisins and cashews - 1/4 cup
  • cumin seeds - 1 tbsp
  • oil- 3-4 tbsp and fo9r frying
  • salt to taste
  • Preparation

    1. Grate the bottle gourd in a bowl, add 1 cup of besan in it and mix it well. Add salt in it and leave it for 2 -3 mins. Mix with besan and salt. Keep aside.
    2. Make round balls of besan mixture and in the centre put grated paneer and a raisin in every ball.
    3. Heat oil to fry and fry the balls until golden brown.
    4. In a kadhai, add 1 tbsp of oil and add cumin seeds, garlic and ginger. Now add chopped onions and green chillies in it.
    5. Add masalas and cashews in it then add tomatoes in it, stir till all mix well. Remove from heat and grind the mixture and put back to the kadhai.
    6. Add fresh cream or malai in it and add water if needed. Now add the half cut fried balls in it, let it sit for 2 mins in the gravy.
    7. Now grate paneer on serving plate after pouring the koftas with gravy.

Dark chocolate Raisin Cake - Egg Free


Dark chocolate and raisins are always one of the best combinations. Thought of using both in a cake and specially Christmas cake. Tempting and Delicious it is

Ingredients

  • All purpose flour - 1 1/2 cup
  • Sugar -3/4 Cup
  • Coco Powder - 1/4 cup
  • Grated Chocolate 1/2 dairy milk
  • Lukewarm Milk 1/4 cup
  • Curd - 1/4 cup
  • Raisins dipped in apple juice (canned) 24 hours before the preparation
  • Oil 1/4 cup
  • Baking powder 1 tbsp
  • Baking soda 1 tbsp
  • Nutella for spreading
  • Sugar Sparkles 1/4 cup

  • Preparation

    1. Soak the raisins in one cup apple juice 24 days before the cake preparation.
    2. Next day, mix the all purpose flour, sugar, baking powder, baking soda, coco powder in a pan.
    3. Add oil and curd and mix well
    4. Now add lukewarm milk in it and make a runny batter with it
    5. Now strain the raisins and add into the batter
    6. Keep mixing until it forms a perfect runny mixture
    7. In a pressure cooker, make a thick base of salt and let it be heated on low flame for 5 minutes
    8. Grease an aluminum cake mould with oil
    9. Add the batter into the mould
    10. Put into the pressure cooker and place it on the salt layer.
    11. Take out the whistle of the cooker lid
    12. Now place the lid on cooker and close it normally
    13. Let it be baked for 30 minutes first on medium flame
    14. After that. check the cake with tester stick, if it is still sticking to it then bake it for 10 minutes more, If not then off the flame
    15. When it passed tester check, take out with the help of gloves and let it be cool
    16. Demould it after 10 minutes
    17. Spread nutella on the top and sprinkle sugar sparkles on it
    18. Cut it in pieces
    19. You can serve it hot and cold both. If want to serve hot, you can add vanilla ice cream in it.


Apple Martini Fruit Shot Cake


Do you like Apple cocktails? I just love apple martini cocktail. Think when you are having a cocktail in cake form. Festive season is going on so thought of making this on Christmas. Dried fruits soaked in vodka and apple juice then added to cake stuff and the taste is just of this world.


Ingredients

  • Vodka (Any type of, I used smirnoff) - 1/2 cup
  • Apple Juice - 1/2 cup
  • Dried apricots 5-6
  • Dried Pineapple 3-4
  • Dried grapes 5-6
  • Dried plums 5-6
  • Raisins 10-12
  • Almonds 5-6
  • Tutty fruity 1/4 cup (mix color)
  • All purpose flour - 1 1/2 cup
  • Sugar 1/2 cup
  • Lukewarm Milk 1/4 cup
  • Oil 1/4 cup
  • Curd 1/4 cup
  • Baking Powder - 1 tbsp
  • Baking soda - 1 tbsp

  • Preparation

    1. Chop the dried fruits
    2. Soak all the fruits in 1/2 cup apple juice
    3. Add the vodka in it
    4. Let them be soaked for at least 2 hours, i soaked for 4 hours
    5. After 4 hours, strain the soaked fruits and keep the juice and vodka mixture aside
    6. Now in a pan, mix all purpose flour, sugar, baking powder and baking soda very well
    7. Now add curd and oil in it
    8. Add lukewarm milk in it and mix it well
    9. Add 2-3 tbsp of vodka mixture in it.
    10. Keep blending it well till it forms a runny mixture
    11. Add 1 tbsp of all purpose flour into the strained soaked fruits, mix well
    12. This will help the fruits in mixing with the batter and prevent them from sticking to one another
    13. Now add the soaked fruits in it and chopped almonds and raisins too.
    14. Mix it really well.
    15. Pre heat the oven for 5 minutes on 150 degree
    16. Grease the aluminium mould with oil and pour the batter in it
    17. Bake it in oven for 30 minutes at 150 degree temperature.
    18. Check with tester stick comes out clear
    19. Then take it out.
    20. Usually cake will take 30-40 to bake properly.
    21. Sprinkle the chocolate powder on it
    22. Garnish with fresh fruits like grapes, pineapple and kiwi.
    23. Your apple martini cake for celebration is ready
    24. Slice and Serve

Dry Fruits Overloaded Cake- EGG FREE


What about a cake full of nuts, dry fruits and tutty fruities. Flavor is out of the world and softness is just it melts in the mouth. Finished in 10 minutes of serving. My christmas party becomes perfect with this in menu.

Ingredients

  • All purpose flour - 1 1/2 cup
  • sugar 1 cup
  • Pineapple juice 1 cup
  • Almonds 18-20
  • Raisins 10-15
  • Walnuts - 5-6
  • Dates 5-6
  • Tutty Fruity Multicolor - 1/4 cup
  • Curd 1/4 cup
  • Coke - 100 ml
  • Baking soda 1 tbsp
  • Baking powder 1 tbsp
  • Oil 2-3 tbsp



Preparation

  1. Soak all the chopped nuts in pineapple juice for 2 hours
  2. Mix all purpose flour, baking soda, baking powder, sugar in a big bowl
  3. Strain the soaked dry fruits and keep aside
  4. Add 1 tbsp of all purpose flour in it and mix well
  5. Now add curd and oil in flour mixture
  6. Slowly add coke in the mixture so that no lumps formed.
  7. Add the floured nuts in the mixture and mix well.
  8. Grease the aluminium mould and pour the batter in it.
  9. Pre heat the oven at 150 deg for 10 minutes
  10. Bake the cake for 40 minutes in oven at 150 degree
  11. It would rise almost 1.5 times to its actual size.
  12. Take out when it clears the tester check
  13. Let it be cool and then demould it
  14. Garnish with almonds and anything you want to
  15. Cut in slices and serve

Ingredients

  • Tomato 1
  • Cucumber 1
  • Carrot 1
  • Sweet corn 1/2 bowl
  • Baby corn 4
  • Red cabbage 1/2
  • Lemon 1
  • Salt
  • Black pepper

  • Preparation

    1. Chop all the ingredients except the sweet corn and baby corn and keep all in refrigerator for 5 minutes
    2. In the mean time, boil the sweet corn and baby corn
    3. Mix all the ingredients in a bowl
    4. Add salt and pepper in it
    5. Sprinkle lemon syrup on it
    6. Serve as it is or if you want to serve chilled then refrigerate for 5-10 minutes
    7. Have it in dinner and you will surely loose weight. Have green tea after it.

Choco Kiwi Rolls

Wanted to have something chocolaty and that too with no hard work. So made choco kiwi rolls with goodness of brown bread and olive oil. Addition of tutty fruity did wonderful taste. Kids love these types of experiments and yes it was a perfect snack for evening.


Recipe Ingredients

  • Brown Bread Slices 6
  • Milk 1/2 bowl
  • Kiwi 1
  • Chocolate fudge (cremica)
  • Tutty fruity red color 1/4 cup
  • Cherries 4
  • Olive oil for frying
  • Bread crumbs 1 bowl

  • Recipe Preparation

    1. Cut the kiwi and keep aside
    2. Cut the bread sides and then roll it with belan or roller
    3. Now spread choco fudge on it
    4. Add kiwi slices on it
    5. Sprinkle tutty fruity on it
    6. Roll it like roll stick ot with tooth pick
    7. Roll all the bread slices like this
    8. Now dip one roll in milk and immediately roll it on bread crumbs
    9. Similarly roll other rolls
    10. Now add oil in a pan and deep fry all the rolls in it one by one
    11. Fry it till turn golden brown
    12. Plate it with jelly and fresh kiwi and cherries.
